It’s finally here. It’s a go-to snack for lunch, supper, and sleep. It couldn’t be simpler, and we can’t get enough of it. It’s also very adaptable and simple to put together, so it’s primed to become your new best buddy.

This isn’t chicken tikka in the sense that chunks of marinated chicken are grilled or roasted on skewers in a tandoor oven in the classic Indian cuisine sense. It isn’t even a complete chicken tikka masala, which is a curried variation in which the chicken tikka is cooked in a creamy spicy tomato sauce before being served over rice. Instead, we’re stealing that great, intensely spicy taste by brushing some quick crispy chicken tenders with our favorite canned masala sauce and baking them. It’s obviously out of the ordinary, but we’re totally up for it.

You’ll Need These Ingredients To Make These Bowls

The ingredient list is long, but it’s all for the sake of adding to the flavor parade! And, although we make that drool-worthy Sauce with Mint from scratch, we depend on a lot of pre-made and store-bought for the rest, and you can, too!

To make the bowl, follow these steps:

  • chicken in a crunchy breading (store-bought)
  • sauce for tikka masala tikka tikka tikka tikka (also store-bought)
  • quinoa that has been cooked
  • cucumbers, sliced or diced
  • red onion, pickled
  • slaw (Hello, you guessed it…) (It’s a store-bought mix!)

For the Sauce with Mint, combine the following ingredients.

  • fresh mint & cilantro
  • basic Greek yogurt or mayonnaise
  • salt
  • A lime’s juice
  • garlic
  • jalapeño

There are some handmade alternatives for you on the crispy chicken front, the tikka masala sauce front, and the slaw front, but if you’re looking for a quick lunch or dinner? So, take those frozen chicken tendon, break open that sauce jar, tear open that bag of slaw mix, and let’s get started, shall we?

We’re going to preserve this version, our favorite version, reeeeeaaaallllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllllll Other than some slicing and dicing to optimize your bowl chompiness and a fast sauce zip in the blender, this is all really simple.

  1. Crispy Chicken is a delicious dish. Cook as directed on the packet, then brush with the tikka masala sauce and return to the oven for another 5 minutes.
  2. Sauce with mint. In a blender or food processor, combine all of the sauce ingredients and pulse until smooth.
  3. Bowl Assembly. Layer your quinoa, crispy chicken, slaw, cucumbers, red onion, pickleds, and then don’t be shy with that Sauce with Mint over the top!

It’ll all be so lovely and colorful after you’ve put it all together that you may want to simply enjoy it for a second, but please, please, please don’t spend any time gazing. GET. DOWN. TO. BUSINESS.

As previously said, these bowls are really adaptable, so if you don’t want to get on the crispy chicken tender bandwagon, that’s just OK! However, we are unable to be friends. (I’m joking!) Maybe.) Regular pan-seared chicken breasts will also work. We’ve also made it with tofu and sweet potato, both of which were fantastic, so use whatever you choose. Those crispy tiny frozen chicken fingies, on the other hand…I can’t suggest these highly enough.

It’s also so wonderful how easy they can be. Lots of pre-made and store-bought options if you’re short on time and patience (us, always), and everything still feels so fresh and flavorful. But there are also ways to really take your time with it and make it your own. Bread and crisp your own chicken? Get at it. Wanna make your own tikka masala sauce? We’ve got a great one here. If you don’t already have some red onion, pickleds in your fridge, don’t worry. You can super quick toss them in a jar and get them pickling in no time. Then they’re just ready for the other hundred times you’ll inevitably make these bowls this week.

  • tikka masala sauce (1/2 cup) (homemade option, or store-bought)
  • quinoa that has been cooked
  • cucumbers, sliced or diced
  • red onion, pickled
  • the slaw (toss a few cups of shredded cabbage and carrots tossed with mayo, vinegar, and salt, or use a store-bought slaw mix)

Sauce with Mint

  • a quarter cup of mint leaves
  • a quarter cup of cilantro leaves
  • 1/2 cup basic Greek yogurt or mayonnaise
  • a half teaspoon of salt
  • A lime’s juice
  • 1 garlic clove
  • 1 jalapeo (hunk)
  • when required, water to thin the sauce

  1. Cook the chicken as directed on the box. Return to the oven for another 5 minutes after brushing with sauce.
  2. Prepare all of the other ingredients while the chicken is cooking.
  3. For the Sauce with Mint, blend or pulse the ingredients through a food processor to make a smooth-ish sauce.
