It isn’t even a complete chicken tikka masala, which is a curried variation in which the chicken tikka is cooked in a creamy spicy tomato sauce before being served over rice. Instead, we’re stealing that great, intensely spicy taste by brushing some quick crispy chicken tenders with our favorite canned masala sauce and baking them. As previously said, these bowls are really adaptable, so if you don’t want to get on the crispy chicken tender bandwagon, that’s just OK! However, we are unable to be friends. (I’m joking!) Maybe.) Regular pan-seared chicken breasts will also work. We’ve also made it with tofu and sweet potato, both of which were fantastic, so use whatever you choose. Those crispy tiny frozen chicken fingies, on the other hand…I can’t suggest these highly enough.
It’s also so wonderful how easy they can be. Lots of pre-made and store-bought options if you’re short on time and patience (us, always), and everything still feels so fresh and flavorful. But there are also ways to really take your time with it and make it your own. Bread and crisp your own chicken? Get at it. Wanna make your own tikka masala sauce? We’ve got a great one here. If you don’t already have some red onion, pickleds in your fridge, don’t worry. You can super quick toss them in a jar and get them pickling in no time. Then they’re just ready for the other hundred times you’ll inevitably make these bowls this week.

- tikka masala sauce (1/2 cup) (homemade option, or store-bought)
- quinoa that has been cooked
- cucumbers, sliced or diced
- red onion, pickled
- the slaw (toss a few cups of shredded cabbage and carrots tossed with mayo, vinegar, and salt, or use a store-bought slaw mix)
Sauce with Mint
- a quarter cup of mint leaves
- a quarter cup of cilantro leaves
- 1/2 cup basic Greek yogurt or mayonnaise
- a half teaspoon of salt
- A lime’s juice
- 1 garlic clove
- 1 jalapeo (hunk)
- when required, water to thin the sauce
- Cook the chicken as directed on the box. Return to the oven for another 5 minutes after brushing with sauce.
- Prepare all of the other ingredients while the chicken is cooking.
